Using Baja Chipotle Salsa & Buffalo Chipotle Seasoning
Chipotle Pulled Pork (Buffalo/Chipotle Seasoning)

Preheat the oven to 220°C/ 200°C Fan then remove the skin and excess fat from the top of the pork shoulder and place it in a large bowl. Add ¾’s of the bottle of Cali Cali Chipotle Salsa - coat the entire shoulder then add the Cali Cali Buffalo/Chipotle Seasoning and coat well.
Put the pork on a roasting tray lined with two layers of tinfoil long enough to wrap around the pork shoulder to create a parcel. Leave the tinfoil open and roast the pork in the oven for 30 minutes.
Chop the garlic, mint and chillies into thin slices and mix with the vegetable stock.
Remove the pork from the oven and lower the temp to 150°C/ 130°C Fan. Pour the stock into the tinfoil around the pork and seal the tinfoil up into a parcel.
Place the sealed parcel back in the oven for 3-4 hours, checking it from 3 hours onward - the pork is ready when it pulls apart easily.
Shred the pork using two forks – Place on a serving dish, drizzle the meat with the flavoured juices from the parcel and dress with the remainder of the Cali Cali Chipotle salsa. Enjoy!
