MUSHROOM & GREEN PEA CURRY
Served with two Pop-a-Grains on the side.
1 pack button mushrooms chopped
1 small onion finely chopped
1 tsp ginger and garlic paste (or 1 clove of garlic, 1 inch size of ginger finely grated)
1 tin chopped tomatoes
½ cup fresh or frozen green peas
½ tsp turmeric powder, 1 tsp cumin powder
¼ tsp garam masala, ½ tsp coriander powder , ½ tsp chilli powder
Chopped fresh coriander to garnish & Cooked basmati rice to serve
Heat the oil in a non stick pan on medium heat, add the chopped onions and saute until translucent, then add the ginger and garlic paste and saute for another min.
Add the chopped mushrooms, fry for about 2 mins, add the tinned tomatoes, and all the spices, let it simmer on low heat for about 3 to 4 mins.
Add the green peas, mix well together, cover and cook for 3 to 4 mins, until everything is cooked.
Garnish with chopped coriander, serve cooked basmati rice and pop a grain on the side. Enjoy.
