PERI PERI CHICKEN FAJITAS

4 tablespoons Cali Cali Peri Peri Sauce
2 tablespoons Cali Cali Chipotle Salsa
450g mini chicken fillet
1 tablespoon coconut oil (11g)
1 red pepper (280g) (thinly sliced)
1 yellow pepper (280g) (thinly sliced)
2 medium red onions (131g per onion) (thinly sliced)
4 wholemeal tortillas (62g per wrap)
85g fat free Greek yoghurt
1 tablespoon lemon juice
1 ½ teaspoon dried oregano
1 tbsp Cali Cali Burrito/Fajita seasoning
For the seasoning:
Heat a wok/pan on medium heat, add the chicken and the 4 tablespoons of Cali Cali peri peri sauce; Stir. Fry chicken for 5 minutes – remove from wok and leave aside.
Add the coconut oil and seasonings into the wok; Stir.
Add the vegetables & leave to cook for 5 minutes or until slightly soft
Next, mix the 85g of Greek yoghurt with the 2 tablespoons of Cali Cali Baja Chipotle & leave aside until assembling.
Finally, add the chicken back in and leave to cook for a further 5 minutes.
Remove from the heat, assemble your wrap and enjoy.
Add another drizzle of the Peri Peri sauce when assembling for the perfect kick! Serve with toppings of your choice
