Spicy Beef Burrito Bowl
Using Burrito/Fajita Seasoning
½ bottle Cali Cali Wings Sauce
Low calorie cooking spray
400g lean beef mince
150g white rice½ tsp Cali Cali Burrito/Fajita Seasoning
½ tsp Cali Cali Burrito/Fajita Seasoning
2 garlic cloves
1 tin black bean, drained (226g)
1 tin sweetcorn, drained (280g)
1 red pepper (156g)
1 yellow pepper (140g)
1 avocado, mashed (112g)
Juice of 1 lime
1 tbsp water
Chop the garlic into thin slices or small pieces. Chop the peppers into long, thin strips.
Cook rice according to packet instructions.
In a large saucepan or pot, heat the low-calorie cooking spray over a medium heat. Add the mince into the saucepan with the Cali Cali Wings Sauce and ½ tsp Cali Cali Burrito/Fajita Seasoning, allow to cook for 8-10 minutes or until brown in colour, stirring occasionally. Remove from the pan, set aside.
Add the reamining Cali Cali Burrito/Fajita Seasoning and garlic to the saucepan alongside the peppers. Add 1 tbsp water to prevent the seasoning from burning while the vegetables cook, stir and leave to sweat for 6 minutes (until soft).
Add the sweetcorn and black beans – Stir and heat for another 4 minutes.
Assemble your bowl by placing a serving of rice in a bowl. Top with the mixed vegetables and beans and the beef. Add the mashed avocado & lime juice on top of the bowl. Add a Dash of our Cali Cali Chipotle salsa to each bowl.
